1. Stuffed Dates with Chocolate Drizzles

Cooking time: 10 minutes

Preparation time: 10 minutes

Serving: 4

Ingredients:

  • Whole almonds, peanuts, and pistachios
  • Finely chopped almonds
  • Finely chopped pistachios
  • 1 cup melted dark chocolate
  • 4 tablespoonfuls
  • creamy peanut butter
  • 15 medium-large dates

Directions:

  • De-seed the dates and set them aside.
  • Fill five dates with peanut butter and stuff with whole salted peanuts.
  • Dip the stuffed dates into the melted chocolate and arrange them on parchment paper.
  • Fill another five dates with whole pistachios and garnish with chocolate.
  • Sprinkle chopped pistachios on the stuffed dates.
  • Stuff the remaining dates with chopped almonds and decorate with chocolate.
  • Sprinkle chopped almonds on top of the stuffed dates.
  • Arrange all the dates on parchment paper and refrigerate for 15 minutes.

2. Dates Square

Cooking time: 25 minutes

Preparation time: 25 minutes

Serving: 12

Ingredients:

  • 1 ½ cups rolled oats
  • 1 ⅓ cups packed brown sugar, divided
  • ¾ tsp baking soda
  • ¾ cup softened butter
  • ¾ lb diced dates
  • 1 tsp lemon juice
  • 1 cup water
  • 1 ½ cups sifted pastry flour
  • ¼ tsp salt

Directions:

  • Preheat the oven to 350 °F.
  • Mix oats, baking soda, salt, pastry flour, and 1 cup of brown sugar in a bowl. Add the butter and mix together.
  • Place half of the mixture into a 9-inch square baking pan.
  • Combine water, dates, and the remaining brown sugar over medium heat; bring to a boil until thickened.
  • Add the lemon juice and remove from heat. Spread over the dough mixture in the pan and add the remaining dough mixture on top.
  • Bake in the oven for about 10–15 minutes.
  • Leave to cool before cutting into 12 squares.

3. Date Balls

Cooking time: 5 minutes

Preparation time: 10 minutes

Serving: 14

Ingredients:

  • 10 biscuits (50g)
  • ½ cup cashews
  • 1 tsp cardamom powder
  • 40g grated coconut (½ cup)
  • ⅛ tsp salt
  • 1 tbsp coconut oil
  • 200g pitted dates
  • ¼ cup crushed almonds
  • ¼ cup desiccated coconut powder

Directions:

  • Toast the cashews in a pan on medium heat until golden. Cool and grind coarsely.
  • Add biscuits and grind together before adding coconut, salt, dates, coconut oil, and cardamom powder.
  • Grind all into a coarse paste and mix thoroughly.
  • Take 1 ½ tbsp of the mixture and shape it into balls.
  • Roll them into desiccated coconut powder and serve.

4. Date Cookies

Cooking time: 10 minutes

Preparation time: 20 minutes

Serving: 48 cookies

Ingredients:

  • 1 tsp baking soda
  • 1 cup butter at room temperature
  • 1 tsp vanilla
  • 1 tsp kosher salt
  • 3 eggs at room temperature
  • 1 ½ cups chopped and toasted pecans
  • ½ cup packed brown sugar
  • 1 ½ cups pitted dates, chopped

Directions:

  • Preheat the oven to 350°F and line baking sheets with parchment paper.
  • Mix flour, baking soda, and salt together.
  • Beat the butter, sugar, and brown sugar with an electric mixer for 2 minutes.
  • Add the vanilla and flour mixture and mix at low speed. Add the pecans and dates.
  • Chill for 4 hours or overnight to increase the chewy texture.
  • Scoop the dough onto the baking sheet and bake for 8-10 minutes.
  • Cool for 5 minutes and move to wire racks to cool completely.

5. Date Caramel

Cooking time: 10 minutes

Preparation time: 5 minutes

Serving: 8

Ingredients:

  • 16 Medjool dates, pitted
  • 1 tsp sea salt
  • 1 tsp vanilla extract
  • 1 cup unsweetened almond milk

Directions:

  • Place all the ingredients into a food processor, starting with the almond milk, and pulse until smooth, with no date chunks remaining.
  • Add more almond milk if needed to thin the caramel to your desired consistency.
  • Use immediately on pancakes or any other dishes of your choice.
